Asian fried cauliflower with peri wedges

 
 

ASIAN CAULIFLOWER WITH PERI WEDGES

Ingredients 

Asian Fried Cauliflower

1 Medium Cauliflower Head

1/2 tsp chilli flakes

1 tsp Salt

1 tsp fresh ground pepper

2 tbsp Cornflour

1 Cup Almond milk 

1 Cup breadcrumbs (I make these with 80% bread and 20% Crackers to give a crunchy coating) 

2 tbsp plain flour

2 cups of sunflower oil to fry

Peri Wedges

4 Medium sized baking potatoes (Maris Pipers also work well) 

4 tbsp Olive Oil

2 Garlic Cloves

2 tbsp paprika

1 tsp garlic powder

1 tsp salt

1/2 tsp thyme or mixed herbs also work

1/4 tsp sugar

Method: 

Cut potatoes into 8 wedges per potato and boil in salty water for 5-7 mins dependant on size, the potatoes should start to feel soft. Remove and place in cold water to stop the cooking process and pat dry. Preheat an oven to 200c. Onto a baking tray place your potatoes, garlic and olive oil and gently toss until fully covered. Place tray in oven and cook for 25-30 mins occasionally turning your wedges

Remove cauliflower pieces and toss together with chilli flakes and cornflour (allow cornflour to totally cover your cauliflower as this will help with the breadcrumbs) prepare your breadcrumbs by placing your bread and crackers in a food processor (Shop bought will also work but homemade gives a crunchier texture) mix together with your salt and pepper. 

Now dip your cauliflower into your almond milk and flour mix and then immediately into your breadcrumbs and coat generously 

Shallow fry on a medium heat for 3 mins each side or until golden brown (if the oil is too cold breadcrumbs will absorb the oil) Remove from oil and place on a paper towel to drain excess oil 

Place paprika, garlic powder, salt, thyme and sugar in a bowl and mix well. Toss your cooked potato wedges whilst hot and serve along with your asian fried cauliflower
